I love .PL and I see a lot of opportunity in .EU and other European ccTLDs. I like .US too :)
Toss up between .US and .IN - I think they both have a huge amount of potential and you can find great deals and available keywords still. With the changes to .TV, I really like it too, but I've not invested nearly as heavily in it.
My prefered is .es, because I am dealing in this ccTLD's and I live in Spain.
I think in the next few years the value of the .es will go up a lot.

.IN is my favorite ccTLD! I own over 150 .in domains. I buy mostly one word .ins or LLL.ins. Why?several reasons:
1.many already get traffic you can monetize
2. Lndia's population pressure will boost .in and internet use in India.
3. India is slated to have the most internet users by 2013(currently at 80 million) with over 250 million internet users.
4. Sales are sometimes slow, but they are occuring and the price range seems stable but increasing year by year.
5.India is a capitalistic country and the internet is relatively free,

I think it's under appreciated and under utilized by US Citizens.
I speak the language -kind of :)
If .US ever opens up and becomes non-restrictive, watch it take off at lightning speed.
Foreigners would really eat up the .US extension. IMHO
